Weeknight Taco Casserole

I love anything taco related, and this taco casserole is at the top of my list of quick and easy weeknight favorites. I've even included some shortcuts to make it an even quicker meal!

Weeknight Taco Casserole

1 lb. ground beef
1 package of taco seasoning
1 15 oz. can of refried beans
1 can of whole kernel corn, drained (this ingredient is optional)
2 cups of shredded cheese (I use the Mexican mixed cheeses)
1 cup of salsa (whatever intensity you desire)
3/4 cup of sour cream
1 small can of sliced black olives
tortilla chips

Preheat oven to 350. While the oven is warming, brown your ground beef. To save time, you may do this in the microwave for about 6 minutes. Drain and add taco seasoning. Cover the bottom of a 9" x 13" pan with tortilla chips. Heat refried beans and corn in the microwave until warm. Combine bean and corn mixture with salsa, sour cream, and 1 cup of shredded cheese. Spread over the top of the chips. Cover with ground beef, then remaining shredded cheese, and top with black olives. Heat in oven until cheese melts, which is about 10-12 minutes. Enjoy!!
